A bowl and a blender to wash up and you’re done! Great to eat about an hour before a workout. Best kept refrigerated. Yield: 10-12 muffins
1 and 1/2 cups Shibolim Whole Wheat Flour
2 bananas, mashed
1 egg
1/4 cup Gefen Honey
1/3 cup oil
1 and 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon Gefen Vanilla Sugar
1 cup blueberries
Preheat oven to 325 degrees Fahrenheit.
Combine flour, bananas, egg, honey, oil, baking powder, baking soda and vanilla sugar and mix until smooth.
Place three to four blueberries at the bottom of each muffin tin, fill with batter until 3/4 full, and top with another few blueberries.
Bake for 20 minutes. Best served warm. Store in the refrigerator.
