Quick and easy apple pie. I got the recipe from my mother. I can do it in my sleep! I usually just eye-ball the ingredients (it doesn’t have to be exact) but I am including measured amounts, though they are estimated. Great for the fall or any time. Topped with vanilla ice cream makes it even better!
8 to 10 Macintosh apples
2 teaspoons Gefen Cinnamon
3/4 cup Haddar Brown Sugar
a pinch of nutmeg
1/4 cup cranberry or orange juice
2 tablespoons flour
2 prepared pie crusts
Peel and slice apples into a large bowl. Sprinkle the apple with the remaining ingredients and mix well. (There should only be a little bit of juice remaining. If it’s too watery, add a little more flour. It should be more pasty than watery.)
Pour into one prepared pie shell and cover with the second. Cut four slits in the top crust to vent. (Tip: Put pie onto a lined cookie sheet to catch any drips.) Bake at 350 degrees Fahrenheit for 45 minutes to one hour. Enjoy!
