I can’t even remember where I first got this recipe from. It’s definitely not an original recipe. But it’s the simplest and tastiest base cake to make for any occasion. Use this cake to make Blueberry Mousse, Deconstructed Fruit Pies, or Caramelized Peach Cups. Yield: 3 2-pound loaf pans (If baking the cake to be eaten as is, you can use a 9×13-inch pan, bundt pan, or muffin tins, but for the above desserts, I start with loaf cakes.)
2 cups sugar
1 cup oil, such as Gefen Canola Oil
4 eggs
1 teaspoon Gefen Vanilla Extract or vanilla sugar
1 cup orange juice
3 cups Glicks Flour
3 teaspoons baking powder
Preheat oven to 350 degrees Fahrenheit. Grease three two-pound loaf pans with nonstick cooking spray.
In the bowl of an electric mixer, add all the ingredients, mixing after each one is added. When your batter is smooth, pour a third of the batter into each pan.
Bake for 30 to 40 minutes until a toothpick inserted into the middle comes out clean. Cool before using.

Is orange juice needed? Would lemon juice work?
lemon juice might add too strong of a flavor…. you can for sure test it out or try a plant-based milk instead of O.J.
I did almond milk mixed with lemon juice. came out delicious. Definitely tasted like more of a lemon cake though
