2 heads cauliflower
1 onion
1 tablespoon kosher salt
1/2 tablespoon ground pepper
1 tablespoon dried parsley
8 ounces shredded mozzarella
5 eggs
1/4 cup almond flour
about 3/4 cup olive oil
3 rimmed baking sheets lined with parchment paper

large mixing bowl and spatula
Process the cauliflower to your liking with the S blade or shred. Add processed cauliflower to the bowl.
Mince the onion and add to the bowl. Add spices. Add the shredded cheese. Mix the eggs in. Mix the almond flour in.
Preheat oven to 425 degrees Fahrenheit.
Pour about 1/4 cup olive oil in each parchment-lined pan and place in oven about 10 minutes until hot. Carefully remove pans from oven and spoon the mixture onto the pans according to your size liking. Cook for 20 minutes.
Remove the pans from the oven and carefully flip. Put back in the oven for 10 minutes.
