Moist and flavorful, this apple cake with extra crumb topping is absolutely delicious! It will become your Yom Tov must-have.
3 eggs
1 cup sugar
3/4 cup orange juice
3/4 cup oil
2 teaspoons vanilla extract
1/4 cup Haddar Brown Sugar
1 and 1/2 teaspoons baking powder
2 and 1/2 cups Glicks Flour
4 apples, peeled and cubed
1/4 teaspoon Gefen Cinnamon
1 and 1/2 cups Haddar Brown Sugar
1 tablespoon Gefen Cinnamon
1 cup oil
2 and 1/2 cups Glicks Flour
Preheat the oven to 350 degrees Fahrenheit.
Line a 9×13-inch baking pan with Gefen Parchment Paper.
In a medium-sized bowl, mix together all of the crumbs ingredients using a fork. Do not overmix.
Using a hand blender or mixer, beat the eggs and sugar on high speed until smooth and creamy.
Add the oil and orange juice. Mix well.
Add vanilla, brown sugar, baking powder, and flour and mix on low speed until combined. Spread the batter evenly into the prepared pan.
Mix the diced apples and cinnamon together. Add to the pan on top of the batter.
Top the apples with the crumbs. Press down the crumbs into the cake so they stick.
Bake for one hour. Allow to cool before slicing.
