Delicata Squash Salad

Ingredients

Squash

  • 1 delicata squash, sliced in circles

  • 2-3 teaspoons pure maple syrup

  • salt

  • pepper

Salad

  • 1 box checked arugula

  • 8-10 cherry tomatoes, sliced

  • 1 avocado, cubed

  • 1/4 bag red cabbage

  • red onion

  • 1/4 cup craisins

  • 2 teaspoons sunflower seeds

Dressing

  • 1/4 cup olive oil

  • 1/8 cup balsamic vinegar

  • 1 teaspoon honey

  • 1 teaspoon mustard

  • 1 garlic cube

  • salt

  • pepper

Directions

Prepare the Delicata Squash

1.

Spray well with avocado oil.

2.

Drizzle two to three tablespoons pure maple syrup.

3.

Sprinkle salt and pepper.

4.

Bake uncovered for 30 minutes on 350 degrees Fahrenheit.

To Assemble Salad

1.

Combine all ingredients in a bowl.

2.

Add the delicata squash once it’s cooled to room temperature.

3.

Drizzle dressing.
