Day 6 of Chanukah – Pizza Melt

OMG these are legit insane and your kids and family will eat these up before you even get to have one. Make sure to put on a ton of cheese before you shape them, to make that satisfying cheese pull. Enjoy!!!

Ingredients

Pizza Melt

  • 1 pound of pizza dough (I use a homemade dough)

  • 1 jar of marinara sauce

  • 1 bag of cheese

  • 1 cup of flour, plus extra for the work surface

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon garlic powder

  • 3 eggs

  • 1 and 1/2 cups seasoned bread crumbs

  • oil, for frying

Directions

1.

Flour down your surface heavily. Take your dough and pour on to the floured surface. Then roll the dough into a log. Cut the log into 6 parts. Take one of those parts and use your hands to stretch and flatten the dough into a round, flat disk.

Once the dough is a flat disk, take the marinara sauce and put 2-4 tablespoons in the middle of the disk. Then spread the sauce all around the middle, but, very importantly, leave the edges empty. Once the sauce is spread, put 1/2 cup of cheese in the middle of the disk and flatten the cheese a little bit to make it more even, but, again, keep the edges empty. You can add whatever toppings you want on top of the cheese, totally optional. Repeat with the remaining disks of dough.

Take all the edges of the disk where there is no sauce, cheese and whatever toppings you put and bring all the edges in together. Give it a good pinch and a twist to make sure all of the dough is together so that it does not open when frying. Pick up your now rolled pizza melt flip it so that you see the smooth side and place on the parchment paper-lined baking sheet. Repeat with the remaining pieces of dough.

Once all are filled and shaped and on that baking sheet lined with a piece of parchment paper, put in the freezer for 10 minutes.

While the pizza bombs are in the freezer, prepare the breading. In a medium-size bowl, whisk together the flour, salt, black pepper and garlic powder until smooth. In a second bowl, beat the 3 eggs till smooth. In a third bowl or large plate, add the seasoned bread crumbs.

When your pizza bombs are ready and are out of the freezer, take one and first dunk it in the flour mixture, then in the egg, then in the crumbs, and then back on that parchment-lined baking sheet Repeat with the rest of the pizza bombs. When all of the pizza bombs are breaded, return back to the freezer until your oil is ready to fry.

Heat oil in a large pot on medium-high heat and pop a popcorn kernel inside. When your oil is ready, take the pizza bombs out of the freezer and you are ready to fry. To fry, simply put 1-2 pizza bombs at a time in the oil and fry for around 1-2 minutes on each side till golden brown. Once fried, put all of the pizza melts back on that parchment-lined baking sheet put in the oven on 350 for 5-10 minutes or until the cheese is oozing out.

These are to be immediately eaten once fried. I would not fry them or bread in advance, but you can certainly fill and shape in advance, up to 5 days in advance.
