These truffles are just something to have in the house to make everyone smile and say, can I please have one ?! Enjoy!
premade chocolate cake mix (it can be homemade or store bought)
2 containers of store bought frosting
4-5 bars of baking chocolate
food coloring in different colors
sprinkles (optinal)
white or dark chocolate (for decoration optional)
Make the chocolate cake and let it cool until it is completely cooled. You can pop it in the fridge covered overnight if needed.
Once the cake is cooled, crumble the cake with gloves until the cake looks like dirt. Then add 1 and 1/2 containers of the frosting into the crumbled cake and mix with gloves until it forms like a dough. If too dry and there are still a lot of crumbs, add the remaining 1/2 of the container of frosting and continue mixing.
Once you have a dough-like mixture, line a baking sheet with a piece of parchment paper. Take 2 tablespoons of the mixture and roll it into a ball and place it on that parchment lined baking sheet. Repeat with the rest of the cake mixture. Once all of the cake has been rolled and placed, take the baking sheet and put it in the freezer for 10 minutes.
While the cake truffles are in the freezer, melt the baking chocolate. There are some things to know about when melting baking chocolate. Number 1, it hardens super quick! If you want to prevent that from happening, get a melting pot. If you do not have or are not able to get a melting pot, you can melt the chocolate in the microwave or in a double boiler once the cake truffles are out of the freezer. If you want to add color to the baking chocolate, add the food coloring before the chocolate starts to melt.
Also, while the cake truffles are in the freezer, you can make the decoration for the top. Take the white or dark chocolate and melt it in the microwave or on a double boiler. Line a baking sheet with a piece of parchment paper. Fill a piping or ziplock bag with the melted chocolate. Cut a small tip and pipe on the parchment-lined baking sheet little stars, dreidels, circles, or whatever else you would like. Once all the chocolate is piped out on the baking sheet, put in the freezer for 2 minutes.
When your cake truffles are out of the freezer, drop one at a time into the melted chocolate, covering it fully. Then, using a fork, take out the truffle from the chocolate, shake off the excess, and place on that same parchment-lined baking sheet. Repeat with the remaining cake truffles. You can also drizzle the chocolate in a piping bag over the top.
Once all the truffes are coated in the chocolate, take the chocolate decorations and spread a little bit of melted chocolate on its flat side. Then, place the side that was smeared with chocolate on the truffle. Gently apply pressure to make sure it does not fall off.
