2 cups flour
1 and 1/2 sticks (3/4 cup) unsalted margarine
1/3 cup sugar, plus additional for sprinkling
1 egg for dough plus 1 egg, lightly beaten, for egg wash
1/2 teaspoon vanilla extract
Gefen Pie Filling
In a medium bowl, mix together flour, margarine, 1/3 cup sugar, one egg, and vanilla. Wrap in plastic wrap and refrigerate for two hours.
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
Roll dough out on a lightly floured surface until about 1/4-inch thickness. Using a large cookie cutter, cut into circles.
Add some pie filling to the center of each circle (about half a tablespoon).
Pinch the corners to form hamantaschen and brush the dough with a lightly beaten egg.
Sprinkle with sugar on top.
Add the hamantaschen to the baking sheet.
Bake until golden brown, around 20 minutes.
