Dairy White Chocolate Pretzel Blondies

I know that come Shavuot time you’re going to see lots of fancy, pretty, dairy desserts. But you really need something like this… something basic that you can mix in one bowl but still feels like a special dairy treat… especially one that’s as easy to make and as amazing as these blondies. Here’s my thinking behind these blondies: I wanted the butter taste but I didn’t want to take out a mixer. So I melted the butter. Plus, butter can get expensive and we use a lot of it over Shavuot, so I used half butter, half oil to avoid the need for two sticks while still getting the flavor. One last thing: You know those white chocolate-covered biscuits (the ones I have are made by Elite)? I broke a few up and added them in here…loved the addition.

Ingredients

Blondies

  • 1 stick (1/2 cup) butter, melted

  • 1/2 cup oil

  • 1 and 3/4 cups Haddar Brown Sugar

  • 2 eggs

  • 2 teaspoons vanilla extract

For Drizzling

  • 1 (3.5 ounce) bar dairy white chocolate, such as Geneve, chopped and melted

Directions

Preheat oven to 350 degrees Fahrenheit. Line or grease a 9×13-inch baking pan. NOTE: You can mix all the ingredients in the same bowl you use to melt the butter if you’re using a large-enough bowl.

In a bowl, combine butter, oil and brown sugar. Mix to combine. Add eggs and vanilla and mix. Add flour and salt and mix until combined. Fold in white chocolate.

Meanwhile, add pretzels to a Ziploc bag and give them a few good bangs with a mallet, the bottom of a pot, or anything you have in the kitchen that’s nice and strong. You should end up with a variety of sizes of pretzel crumbs and pretzel pieces. Fold pretzels into batter.

4.

Add batter to prepared baking pan. Bake for 30 minutes. (Note: In my oven, 30 minutes was perfect in a disposable. It would be shorter in a Pyrex…plus all ovens are different.)

I made the dairy white chocolate pretzel blondes but the blondies didn’t rise at all. As a result it wasn’t light but heavy. Quite disappointing.
