CAKE
4 eggs
2 T. vanilla sugar
2cups sugar
1 stick butter
8 oz. whipped cream cheese
8 oz. sour cream
2cups WonderMills flour
2 tsp. baking powder
Vegetable oil spray
CREAM FILLING
2 cups heavy cream
1 cup confectioners’ sugar
1 (16 oz.) package frozen strawberries
CAKE DIRECTIONS
1. Preheat the oven to 350°.
2. Mix together the first four ingredients, then slowly add the remaining ingredients.
3. Spray two 9-inch springform (or disposable) pans. Spread the batter evenly in the pans.
4. Bake for 45 minutes. Cool.
CREAM FILLING DIRECTIONS
1. Whip the heavy cream on medium speed for 1 to 2 minutes until slight peak forms. Do not overmix as it will turn into butter.
2. Gradually add 1 cup confectioners’ sugar, and mix until combined. Scrape the bowl as needed and remix.
3. To assemble, place one cake on a cake tray.
4. Divide the cream filling in half. Spread one half of the cream over this cake. Arrange sliced strawberries on the cream.
5. Place the second cake on the first. Spread the rest of the cream on top.
6. Decorate the cake with more strawberries.
