Cucumbers and peppers are most kids’ favorite veggies… so this salad is a natural for them!
6 large cucumbers
1 red onion
1 carrot
1/4 red pepper
1/4 yellow pepper
1/4 green pepper
3/4 cup sugar
1/2 cup vinegar (use gluten-free if needed)
1/3 cup oil
4 teaspoons water
3 teaspoons salt
Peel and slice cucumbers, onion, and carrot.
Cut peppers into thin strips.
Combine all dressing ingredients, pour over vegetables, and allow salad to marinate overnight.

Delicious indeed. After making it many times and tweeking the amount of sugar I now only put 1/3 cup – still tastes great and makes it healthier.
