I will use any excuse to make a good salad. I love adding different components pertaining to the season. In this case, it’s chestnuts. But the best part? The Gefen Ramen Toppers Crunch! My daughter who was next to me as I was making this salad may or may not have snuck most of the ramen crunch, it’s just that good!
1 head romaine lettuce, shredded
1/2 cup edamame
1 cup shredded carrots
1 cup red cabbage
1 (3-and-1/2-ounce) bag chestnuts, chopped
1 cup Gefen Ramen Toppers
1/2 cup peanuts
1/2 cup Baracke Tahini
1/4 cup lemon juice
2 tablespoons honey
1/2 cup water (as needed; see note)
2 cloves garlic, crushed (or 2 cubes Gefen Frozen Garlic)
1 teaspoon dried parsley
1/2 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon black pepper
In a jar or salad dressing container, add all the ingredients for the dressing and shake well. You will likely have extra dressing; it lasts a few weeks in the fridge and can be used for any salad!
In a bowl, add all the vegetables, and add the Gefen Ramen Toppers. Drizzle the salad dressing over the salad. Toss lightly and serve.
