The unusual crust on this fish keep the salmon nice and moist and gets great color. Yum!
4–6 salmon fillets
salt
bottled ranch dressing, such as Tonnelli Ranch Dressing
black pepper
1/2 cup onion-garlic salad croutons, crushed
1/4 cup Parmesan cheese
Clean, wash and pat salmon dry. Place in baking pan. Sprinkle with salt. Pour ranch dressing carefully over each slice of salmon and spread to cover top and sides. Sprinkle with black pepper.
Combine crushed croutons, Parmesan cheese, and mix well. Pour crouton mixture over salmon slices and press gently with back of spoon to set in place. Sprinkle lightly with basil.
Bake, covered, at 350 degrees Fahrenheit for 20 to 25 minutes. Uncover and broil salmon until golden.
