This trending sweet smashes two perfectly good pastries to create the hybrid croissant cookie!

Ingredients

Croissant Cookie

  • 1 croissant, sliced in half lengthwise

  • 1 cup sugar

  • 1 cup light brown sugar

  • 2 sticks vegan butter

  • 2 eggs

  • 1 and 1/2 teaspoons Gefen Vanilla Extract

Directions

1.

In a large mixing bowl, mix the butter and sugars until integrated (does not need to be fluffy).

Mix in the eggs and vanilla. Then mix in the flour, baking soda and salt. Lastly, add the chocolate chips.

Add about two heaping tablespoons to 1/4 cup cookie dough to the middle of the sliced croissant and close. Add small globs of dough on top of the croissant as well.

Bake at 350 degrees Fahrenheit for eight to 10 minutes or until golden brown.

Allow to cool for about five minutes before enjoying.

Notes:

With the remaining dough, make cookies! Form dough into balls. Place on a greased cookie sheet two inches apart. You can place in the fridge for 15 minutes prior to baking to create crispy edges with a gooey center. (You can also freeze at this point and transfer to a sealed bag once frozen solid.) If baking from frozen add a couple extra minutes to the baking time.
