Ingredients

Crockpot Potato Leek Soup

  • 5 cubed yellow potatoes

  • 2 ribs celery, diced

  • 1 chopped Vidalia onion

  • 1 cup sliced yellow squash and zucchini mix

  • 1 carton boxed potato-leek soup

  • 2 cups water

For Topping

  • diced leftover chicken

  • air-fried tofu cubes

Directions

1.

Throw all ingredients in crockpot and cook on low for seven to eight hours or high four to five hours.

2.

Add chicken and tofu cubes. Serve with a delicious, fresh salad, and dinner is done.
