While you can make these crispy crepe quesadillas with just cheese for the kids, if you’re going to get creative with the ingredients, stay away from anything that’s too chunky or watery that the crepe won’t be able to hold up. shredded mozzarella cheese
fresh basil leaves
1 plum tomato, very thinly sliced or diced OR Tuscanini Marinara Sauce
Spray a frying pan with nonstick cooking spray and heat. Add crepe and filling. We included shredded mozzarella cheese, thinly sliced tomato, and fresh basil. Top with remaining crepe and cook for four minutes.
Use both a spatula and your finger, flip quesadilla and cook an additional two to three minutes.
