This is my lightened-up version of tempura batter-fried veggies. It’s absolutely delicious. Tastes best freshly made. Feel free to sub cauliflower or use a combination of both.
4 full cups Beleaf Frozen Broccoli Florets (14 ounces/400 grams)
2 eggs
2 tablespoons flour (I used white spelt)
3/4 cup Gefen Panko Crumbs
1 and 1/2 teaspoons spice mix (see note)
salt, to taste
pinch cayenne pepper
Preheat oven to 400°F (200°C). Line a baking sheet with Gefen Parchment Paper.
Defrost broccoli florets for three minutes in the microwave. Roll dry in a towel.
Place eggs in a bowl and beat lightly with a fork. Add the flour and whisk together until smooth. In a medium bowl, place the panko, one and 1/2 teaspoons of the spice mix, salt, and cayenne. Mix well.
Dip each broccoli floret into the egg mixture, then roll in panko-spice mixture to coat. Place on the prepared baking sheet. Spray with olive oil spray. Bake for 20–25 minutes or until crispy.
Serve with a spicy cheese or yogurt dip, if desired.

If I don’t have a microwave, what’s an alternative way to defrost the broccoli?
Leave it out on the counter or you can steam it.
