Crispy, flavorful schnitzel without having to bring out the jug of oil and fry mid-week? Sign me up! If you have yet to jump on the air-fryer bandwagon, now is the time. This schnitzel comes out so crispy, your kids won’t miss the fried version, guaranteed!
2 pounds (about 8 pieces) thin chicken cutlets
2 eggs, beaten
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko crumbs, such as Gefen
1/2 cup plain bread crumbs, such as Gefen
1/2 cup Gefen Cornflake Crumbs
1 tablespoon Gefen Cornstarch or flour
1 tablespoon dried parsley
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Preheat air fryer to 390 degrees Fahrenheit.
Prepare the chicken: In a bowl, mix chicken with eggs, paprika, garlic powder, salt, and pepper until coated.
Prepare the bread crumbs: In a separate bowl or pan, mix together panko, plain bread crumbs, cornflake crumbs, cornstarch or flour, parsley, paprika, garlic powder, salt, and pepper.
Coat both sides of the chicken well with the bread crumb mixture and set aside.
Spray the air-fryer basket with cooking oil. Place chicken inside in a single layer (you will need to work in batches). Spray chicken generously with cooking oil.
Cook 15 minutes, turning over halfway through. Repeat until all chicken is cooked.
