This is one of my favorite easy suppers, a really creamy delicious tomato soup. The grilled cheese croutons are perfect on top. —Sara
3 tablespoons butter
1 onion, diced
2 cloves garlic, sliced
fresh thyme sprigs (optional)
1/4 cup Tuscanini Tomato Paste
1 28-ounce can whole tomatoes (with juices)
1 teaspoon sugar
4 cups water
1/4 cup heavy cream
salt, to taste
pepper, to taste

Sauté onions and garlic in butter. Add thyme, if using. Add tomato paste and stir until slightly browned.
Add canned tomatoes, sugar, and water.
Meanwhile, make your croutons. Prepare a grilled cheese sandwich (I did this in my panini maker) and cut into squares.
Puree the soup and allow to cool. Add in the heavy cream.

Does this freeze well? Also if I do freeze it? Should I add the heavy cream after I defrost it ?
