Delicious hearty tomato soup, can be made parve or milchig.
1/4 cup Bartenura Olive Oil
1 medium onion
3 cloves garlic, or 3 cubes Gefen Frozen Garlic
2 (28-ounce) cans whole tomatoes
1 tablespoon brown sugar
3 slices rye or whole-wheat bread, crust removed, diced
2 tablespoons parve chicken soup mix
2 cups water
salt to taste
pepper to taste
Heat oil, add diced onions and garlic and let sauté until the garlic starts to brown, three to five minutes.
Add tomatoes and mash with a potato masher; let cook for five minutes.
Add bread and brown sugar; blend with immersion blender (not fully) after the bread is saturated.
Add soup mix and water and bring to a boil.
Add salt and pepper and one more tablespoon oil. Let simmer for five minutes and serve. Enjoy!!
