These creamy homemade ice pops perfect for coconut lovers and perfect for summer. Yields 8 ice pops
14 ounces coconut milk
1/4 cup sugar
1/4 teaspoon Gefen Pure Vanilla Extract
1/2 cup sweetened coconut flakes
In a large bowl, whisk together coconut milk, sugar, and vanilla extract. Whisk in the coconut flakes.
Pour mixture into ice pop molds and insert sticks.
Freeze until firm, at least six hours.
