Healthy yet delicious – a family favorite! I always double this recipe. Freezes beautifully.

Ingredients

Main ingredients

  • 2 tablespoons Gefen Canola Oil

  • 1 onion, chopped

  • 1 clove garlic

  • 5 cups water

  • 2 and 1/2 cups sliced carrots

  • 1/4 cup raw rice (I use brown rice)

  • 2 tablespoons chicken soup mix/consomme (meat or parve)

  • salt to taste

Directions

Make the Soup

1.

Sauté onion and garlic in oil until soft.

2.

Add water, carrots, rice, and consomme. Bring to a boil and then simmer for 30 minutes or until carrots are soft.

3.

Blend in pot using immersion blender.
