1 package Manischewitz Yellow Cake Mix (about 2 cups)
2 cups corn meal
1/4 cup sugar
1 teaspoon Haddar Kosher Salt
2 eggs
1/2 cup oil
1 cup nondairy milk such as Gefen Almond Milk
Preheat oven to 450 degrees Fahrenheit.
In a large bowl, mix all ingredients well.
Pour into cupcake tins. Be sure to fill only halfway. Alternatively, you can pour into a greased eight- by eight-inch cake pan for cornbread squares.
Bake for 15-20 minutes.
Cool and serve. These are best served warm with butter or margarine.

How do I make Manischevitz Yellow cake mix? I live in Israel where I don’t have the yellow cake mix… and I still want to make the corn muffins. What can I do instead???
