1 teaspoon salt
3.5 teaspoons baking powder
1 egg
1/4 teaspoon vanilla extract
1 cup soy milk
1/3 cup canola oil
1 cup flour
1 cup cornmeal
2/3 cup sugar
Preheat oven to 200c.
Combine dry ingredients.
Put the soy milk in and let it sit for a few minutes so cornmeal is less grainy. Then add all of the ingredients.
Mix well and pour into muffin pan. Bake for 20 minutes.
