These super easy coconut turnovers can be prepared in a pinch using ready-made flaky dough. The coconut filling is gooey and delicious, with just the right amount of sweetness. Delightful and beautiful, these sweet treats can be filled with the filling of your choice if coconut isn’t your thing.
1/2 package Gefen Puff Pastry or other flaky dough, store-bought or homemade
5 eggs, separated
1 and 1/2 cups sugar
2 tablespoons Gefen Vanilla Sugar
3 and 1/2 ounces coconut
rind of 1 lemon or a few drops lemon juice
Beat egg whites until stiff, adding sugar gradually. Add remaining ingredients.
Roll out dough to 1/8 inch thickness and cut into three inch squares.
Place one teaspoon filling onto center of each square. Fold each square into a triangle.
Bake at 350 degrees Fahrenheit for 15 minutes.
Dust confectioners sugar over cookies.
