A fun new way to prepare parve mousse without any eggs or unhealthy cream substitutes.
2 (15-ounce) cans full-fat coconut cream
3 tablespoons Gefen Confectioners’ Sugar
1/2 tablespoon Gefen Vanilla Extract
3 tablespoons Gefen Cocoa Powder
shaved chocolate, for garnish
Place cans of coconut cream in the refrigerator for at least 30 minutes. Remove only the coconut fat that has settled at the top of the can; the coconut water is not needed for this recipe.
In a large mixing bowl, use an electric mixer to whip the coconut cream, sugar, vanilla, and cocoa powder until smooth and well combined.
Pour into parfait cups, top with shaved chocolate, and allow to set in the fridge for at least 30 minutes before serving.

Does the coconut fat have a strong coconut taste?
It gets masked by the chocolate but might still be discernible.
