Sweet cheese pancakes with a cinnamon swirl and thick cream cheese glaze. Perfect for a really special breakfast for that special someone. Yield: 12 pancakes
1 pound farmer cheese
4 eggs
1 cup flour
1/3 cup sugar
1/2 cup milk
4 tablespoons brown sugar
2 tablespoons maple syrup
1/2 teaspoon cinnamon
3 ounces whipped cream cheese
2 tablespoons maple syrup
2 tablespoons confectioner’s sugar
In a medium bowl, combine farmer cheese with eggs, flour, sugar, and milk, and mix to combine.
Heat a large frying pan over medium–high heat. Spray with nonstick cooking spray.
Prepare the cinnamon swirl. In a small bowl, combine brown sugar, maple syrup, and cinnamon, and mix well. Set aside.
Using a spoon to scoop the batter, place two tablespoons of the pancake batter in the frying pan, and cook for one minute. At this point the pancake should just begin to set.
Take your cinnamon swirl; starting from the center of the pancake, slowly swirl some of the filling into the pancake.
Cook for an additional two minutes, or until bottom is golden brown. Flip over. Cook for another 30 seconds.
Combine confectioner’s sugar with cream cheese and maple syrup, and mix well. If mixture is too thick, add one tablespoon milk. Drizzle glaze over pancakes and serve.
