The pairing of warm caramelized apples and cinnamon spice, with a homey sweet noodle kugel, is just wonderful. Serve these as individual kugel cups, or if you’re looking for a faster bake, use a round silicone baking mold and increase the cook time (45 to 60 minutes).
Makes about 24 individual cups

3 red apples (cored, peeled, and thinly sliced)
1 and 1/2 tablespoons water
1/4 cup sugar
20 grams (about 1 and 1/2 tablespoons) vegan butter/margarine
1 (12-ounce) package Manischewitz Gluten Free Egg Noodles
6 eggs
8 tablespoons oil
1 and 1/2 cups sugar
1 teaspoon vanilla sugar
2 teaspoons Gefen Ground Cinnamon
2 shakes of nutmeg
In a small saucepan, add the water and sugar. Cook until the sugar dissolves and turns a light amber color (five to seven minutes), then add the vegan butter or margarine.
Stir constantly until the mixture turns a creamy light brown color, and add the sliced apples.
Stir to coat all the apples in caramel and let cook till softened, about 15 minutes. Set aside.
Heat up a pot of water till boiling and add one teaspoon salt. Pour in a package of Manischewitz egg noodles and let cook until soft, about 13 minutes. Drain.
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a large bowl, add the eggs, oil, sugar, vanilla sugar, cinnamon, and nutmeg. Mix to combine. Add the drained egg noodles and mix once again.
Place silicone muffin liners in a muffin tray or oil a silicone muffin tray (it’s easiest to pop the kugel cups out of silicone!).
Lay a few apple slices in the bottom of each muffin cup and fill to the top with noodle kugel mix.
Bake for 20 to 25 minutes, until set. Let cool slightly before popping out of the muffin trays.
Serve warm with a dusting of cinnamon.
