I love the cilantro-lime combination in this beautiful salad.
1 can corn
salt, to taste
pepper, to taste
1 box cherry tomatoes, sliced lengthwise
1 yellow pepper, diced
1 red pepper, diced
1 small red onion, diced
1 large avocado, diced
1/4 cup finely chopped fresh cilantro
juice of 1 lime (or about 2 tablespoons Heaven & Earth Lime Juice)
2 cubes Gefen Frozen Garlic
1 teaspoon Gefen Vinegar
1 tablespoon oil
In a frying pan on a medium-high flame, heat a little oil and sauté corn with salt for five to 10 minutes until browned. (Although this step can be skipped, sautéing the corn adds amazing flavor.) Cool completely.
Place all ingredients in a large bowl. Toss to combine.
