Mint is the kind of flavor that you either love or you hate. I’m not here to try to convince you to go for my favorite ice cream flavor (mint, obviously) but if you do like it, this recipe is a must try! Aside from the beautiful presentation this dessert brings to the table, the chocolate mint combo is absolutely addictive. The crumble is a shortcut: just plain ol’ sandwich cookies!
1 package chocolate sandwich cookies
1 (16-ounce) container Kineret Whipped Topping
1 (8-ounce) container non-dairy cream cheese
1/2 teaspoon mint extract
3 drops green food coloring
1 box mint thins, divided
1/2 cup Haddar Mini Chocolate Chips
fresh mint, for garnish
Place cookies in a Ziploc bag. Use a rolling pin to crush into coarse crumbs. Set aside.
Beat whipped topping in a mixer on high speed until stiff peaks form. Transfer to a bowl and set aside.
Combine cream cheese and confectioners’ sugar in the mixer and beat until smooth. Add mint extract and food coloring. Mix until combined, scraping sides with a spatula if needed. With a sharp knife, chop half a box of mint thins and add to mixer. Add chocolate chips and mix until incorporated.
In a small dessert cup, layer cookie crumbs and mint cream, then another layer of cookies and cream. Finish with a light layer of cookie crumbs and garnish with reserved mint thins and fresh mint.
