Chocolate Lava Cakes (Gluten-Free)

Gluten-free chocolate lava cakes are individual moist chocolate cakes that are perfect for Passover!

Ingredients

  • 4 (8-ounce) ramekins or baking cups

Chocolate Lava Cakes

  • 1/2 cup coconut oil

  • 6 ounces semisweet chocolate chips

  • 1 cup sugar

  • 4 eggs, room temperature

Directions

Prepare the Cakes

1.

Preheat oven to 400 degrees Fahrenheit. Grease ramekins or baking cups and set aside.

Microwave coconut oil and chocolate chips in 15-second increments until chocolate is melted.

3.

Stir in sugar. Add eggs and mix until smooth.

4.

Mix in almond flour and salt.

Bake

1.

Fill prepared ramekins or baking cups halfway with cake batter.

2.

Bake until cake tops are puffed and set (but insides are still soft), about 25 to 30 minutes.

3.

Let cool slightly. Dust with confectioners’ sugar, if using, and serve.
