These wonderful bars were inspired by Brochi J., a dear friend and fantastic baker. I reduced the sugar and added some fibre to her original recipe, and no one complained. I also substituted “Just Right” cereal for the Rice Krispies with great success.
4 and 1/2 cups (quick cooking or whole) oats
4 and 1/2 cups Rice Krispies cereal (or Just Right cereal)
2 tablespoons wheat or oat bran
1/4 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 (10-ounce) bag mini chocolate chips
1/3 cup oil
1/3 cup melted butter, or additional oil
1 cup honey
Mix dry ingredients very well.
Add oil, butter, and honey. Mix until well combined.
Lay flat onto a parchment-lined cookie sheet. Press all over with the back of a spoon to even out the layer.
Bake at 350 degrees Fahrenheit for 15 to 18 minutes. (Shorter for chewier, more crumbly bars; longer for crunchier, firmer bars.)
