1 pound Gefen Confectioners’ Sugar
2 egg whites (pasteurized)
1 pound raw white almonds, finely ground
favorite rum ball mixture
8 ounces chocolate, melted
Combine ingredients for dough, knead to form soft dough.
Divide into 10 to 12 parts.
Place dough between two pieces of plastic. Roll to 15 inches long, one and a half inches wide and one-eighth inch thick. Form thin log of filling and place in center of strip. Fold dough over, place seam-side down onto cookie sheet and freeze for two to three hours.
Cut into one-and-a-half-inch bars. Dip both ends into melted baking chocolate.
