This is such a yummy and fantastic-tasting cookie! It also looks really pretty, and can easily be used for a simchah or to send over for that special occasion. Enjoy the great chocolate-cookie combo – this is one flavor whose popularity seems to increase over time!
2 and 1/2 cups Glicks Chocolate Chips, divided
1/2 cup (1 stick) margarine (use soy-free, if needed)
1 cup sugar
1 teaspoon Gefen Vanilla Extract
1/2 teaspoon mint extract
2 large eggs
1 and 1/2 cups flour
1/4 cup Gefen Cocoa Powder
1 teaspoon baking powder
1 teaspoon instant coffee granules
1/2 teaspoon salt
16 coffee candies, crushed
Preheat oven to 375°F (190°C).
Melt two cups chocolate chips. Set aside two-thirds cup melted chocolate for drizzling.
Beat margarine, sugar, and extracts in a large mixing bowl. Add eggs and chocolate; beat until combined. Add dry ingredients besides for candy; mix just until combined.
Stir in remaining chips and form into 1-inch (2.5-cm) balls. Place on a prepared baking sheet, spacing one and a half inches apart.
Bake 10 minutes and cool on rack. Rewarm reserved chocolate and drizzle over cookies. Sprinkle with crushed candy. Chill to set.
Yields: 2 and 1/2 dozen cookies
