Alone or with the caramel cream and chocolate chunk topping this muffin will make your day.
Not only is it delicious it is also full of healthy nutrients and low in sugar. It will not put you into a sugar coma! It is the type of treat you will love to eat and that will love your body right back. It will fill you and provide healthy energy to get through your day.
1 cup Gefen Cashew, almond, or other nut butter
1 cup Haddar Applesauce
3/4 cup Gefen Cocoa
2 eggs
1 teaspoon baking soda
1 teaspoon Gefen Vanilla
1-2 ounces dark or unsweetened chocolate, chopped (optional)
1 (15- to 16-ounce) can coconut cream
3 tablespoons Gefen Cashew Butter
3-4 tablespoons pure date or maple syrup or raw honey
Preheat your oven to 350 degrees Fahrenheit and line muffin pans.
Combine all ingredients together, reserving chocolate until the end. Blend ingredients with a food processor or blender.
Fold chocolate into the mixture, if using.
Fill muffin molds three-fourths full. Bake for 15–18 minutes.
Blend all ingredients until smooth.
Chill for about 15 minutes, then use to top your muffins. Use a piping bag or just spread. So. Good.

Hi- no this recipe is not missing an ingredient. It is a low sugar muffin. The applesauce is the sweetener for the muffin and the maple syrup is the sweetener for the cream.
