We can all use a cookie or biscotti with our coffee. It took me some time to come up with a good recipe that would fit under the title “healthy cookie.” After many trials, this one was chosen as the winner.
3 eggs
2/3 cup xylitol
3/4 cup oil
2 teaspoons Gefen Pure Vanilla Extract
3 cups Shibolim Spelt Flour (you can also use whole wheat if you don’t mind a brown cookie)
2 teaspoons baking powder
1/2 teaspoon salt
1 – 1 and 1/2 cups Gefen Sugar-Free Chocolate Chips
Preheat oven to 350°F (180°C).
Beat the eggs and xylitol in a mixer at high speed. Add the oil, vanilla, flour, baking powder, and salt, and mix well. Add the chocolate chips.
Roll into small balls and place on a baking sheet.
Bake for 15–20 minutes, or until lightly browned. Cool before removing from sheet.
Wet your hands and form the dough into a loaf. Bake for 20–30 minutes.
Let cool for approximately 10 minutes. Slice loaf into 1/2-inch- (1-cm-) wide slices.
Place the slices cut side down and bake for another 5–10 minutes.

what speed? to add rest of ingredients after beating xylitol in mixer?
it says beat on high then add rest- do you lower speed? add it in the order given or dry alternating with oil?
You can lower the speed to medium. Add in the order given.
oil hi the recipe says that wholewheat spelt can be used. wouldn’t one have to reduce the oil as wholewheat absorbs less oil? tks
I would keep the recipe the same.

The ratio is one to one.
I did the biscotti version- delicious!!
finally i found a cookie recipe with no sugar or white flour! AND they are heaven!!! best choc chip cookies I’ve ever made!
Can the xylitol be substituted for any other sugar alternative?
I think you should be able to use any other powdered sugar alternative or regular sugar but I haven’t tested it.
