1/2 cup Gefen Olive Oil
3 tablespoons vinegar
3/4 teaspoon chili powder
1/4 teaspoon Pereg Cumin
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
1 pound tomatoes, diced
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can sweet corn, drained
3 scallions, sliced
1/2 red pepper, diced
1/2 green pepper, diced
1/2 cup chopped fresh parsley
1 avocado, diced
tortilla chips, for serving
pulled beef, for serving
In a bowl, combine oil, vinegar, chili powder, cumin, garlic, tomatoes, black beans, corn, scallions, red and green peppers, and parsley.
Place in an airtight container and refrigerate at least 20 minutes to let flavors meld.
When ready to use, add avocado and serve alongside chips and pulled beef.
