taco-flavored Scoops chips (Tostitos brand)
2 tomatoes, finely diced
1 red onion, finely diced
2 avocados, finely diced
1 jalapeño, diced (optional)
3 tablespoons cilantro, chopped
1 and 1/2 pounds (3/4 kilograms) chicken breast, thin cut or butterflied
1/2 cup salsa
1/4 cup Gefen Mayonnaise
1 teaspoon salt
1 cup Gefen Panko Crumbs
1/4 cup parve sour cream
1/4 cup Gefen Mayonnaise
1/2 teaspoon salt
juice of 1/2 lime (or about 1 tablespoon Heaven & Earth Lime Juice) or 1/2 lemon
Cut the chicken into small bite-sized pieces.
In a medium-sized bowl, mix the salsa, mayo, and salt.
Toss the chicken in the salsa mixture and then in the panko crumbs.
Lay on two Gefen Parchment-lined baking sheets and bake for 10 minutes.
Meanwhile, mix the dressing ingredients.
Lay out tortilla Scoops and put a piece of chicken in each one.
Sprinkle with diced tomato, onion, avocado, and jalapeño.
Sprinkle with cilantro, then drizzle with dressing.
