Here are two ways to prepare classic and delicious Chicken Salad. Choose your favorite, or try them both! Chicken Salad is delicious on its own or inside a sandwich for lunch or even supper on warm days when you’d rather be outside than stuck in the kitchen. For a chunky variation, try this chicken salad recipe from the OU.
1 and 1/2 cups cooked chicken, cubed
1/2 cupĀ Gefen Mayonnaise (or use sugar-free mayonnaise)
4 tablespoons Heaven & Earth Lemon Juice
6 lettuce leaves, shredded
2 scallions, chopped
3 potatoes, cooked and cubed
1 tomato, sliced
2 hard boiled eggs, sliced
1 and 1/2 cups cooked chicken, flaked
2 scallions, chopped
2 medium pickles, such as Haddar Cucumbers in Brine, diced
1/4 cupĀ Gefen Mayonnaise (or use sugar-free mayonnaise)
Combine all ingredients for your desired salad.
Toss to mix.
Chill and serve.
