Lo Mein is one my favorite dishes to make. I love how a starch, protein, and veggies are all incorporated into one dish.
4 tablespoons reduced sodium soy sauce, or more, to taste
4 teaspoons sugar
2 teaspoons sesame oil
1 teaspoon (or frozen cube) ground ginger
1 teaspoon Sriracha, or more, to taste
1 teaspoon hoisin sauce (optional- don’t use if you don’t have)
4 chicken cutlets
1 teaspoon (cube) ginger
1 tablespoon brown sugar
1 tablespoon soy sauce
2 cloves garlic, minced
2 tablespoons sesame oil (divided)
¼ cup cabbage
¼ cup shredded carrots
1 zucchini, julienned
1 onion, sliced thin
1/2 red pepper, sliced thin
1 package noodles (I used linguine)
Cook noodles according to package.
Cut chicken cutlets really thin, and then slice into small pieces. Coat in marinade: ginger, sesame oil, soy sauce and garlic. Heat 1 tbsp sesame oil in a wok and add chicken. Cook on medium heat until cooked through (about 4-5 minutes per side). When cooked, remove chicken from pan.
Mix together 4 tbsp soy sauce, sugar, 2 tsp sesame oil, 1 cube ginger, 1 tsp sriracha, and 1 tsp hoisin sauce.
Add more sesame oil If needed, and raise heat to medium-high.
Add the onion, and cook until translucent (about 5 minutes), then add peppers and carrots, cook for 2 minutes. Then add cabbage and zucchini, cook for 1 minute. Add the noodles, chicken, and sauce. Mix together until everything is well coated in sauce.
