Submitted by Molly Hagler I’m a medical student, which means my time to make dinner is limited. I need food that I can quickly throw in the oven, while I study. This is one of my favorite dishes, because It is so quick and easy and so delicious.
1 cup white rice
1/2 cup salsa
1 and 1/4 cups water
1/2 tsp salt
1/4 cup olive oil
2 tsp chili powder
1 tsp cumin
1/2 tsp salt
A pinch crushed red pepper
3 cloves garlic, minced
3 TBSP lime juice
1 lb boneless, skinless chicken breasts
1 red and 1 yellow pepper, sliced into strips
1 onion, sliced
Place the rice, salsa, water, and salt in a pot, cover, bring to a boil, and then lower to a simmer for 15 minutes.
Mix together the olive oil, chili powder, cumin, salt, crushed red pepper and garlic.
Place peppers and onions on one side of a greased sheet pan, and drizzle with half of the sauce.
Add the lime juice to the remaining sauce.
Place the chicken on the other half of the sheet pan and drizzle with the rest of the sauce mixture.
Cook at 400F for 30 minutes uncovered.
Serve chicken and vegetables over the rice.
