Ingredients

Waffles

  • 1 and 1/2 cups Glicks Flour

  • 1/2 cup Gefen Cornstarch

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 and 1/2 cups pareve whipped topping

  • 1/2 cup coconut milk

  • 2 eggs

  • 2 tablespoons sugar

  • 1 teaspoon vanilla extract

Hot Honey

  • 1 Thai chili pepper

  • 1/2 teaspoon margarine

  • 3/4 teaspoon apple cider vinegar

Breaded Chicken

  • 6 chicken legs, deboned

  • Glicks Flour seasoned with paprika, garlic powder, and onion powder, for coating

  • egg, for egg wash

Directions

Prepare the Waffles

1.

Place flour, cornstarch, salt, baking powder, and baking soda in a bowl and mix.

Place the rest of the ingredients in another bowl and mix.

3.

Add the wet ingredients to the dry ingredients and mix thoroughly. Chill the batter.

4.

Ladle waffle batter into a preheated waffle iron and cook until golden and crisp.

Prepare the Hot Honey

1.

Sauté chili pepper in margarine. Deglaze with vinegar. Add honey and salt. Let simmer for 20 minutes.

Prepare the Breaded Chicken

1.

Coat chicken legs with seasoned flour. Transfer to another bowl and dredge with egg wash. Then coat with seasoned bread crumbs and fry until golden brown.

To Serve

1.

Place one piece of chicken on each waffle and drizzle with hot honey to taste.

Tips:

When preparing food ahead of time, divide your prepared ingredients into separate ziplock bags to keep them from blending into each other. Keeping them separate will also keep them fresher for longer.
