Chicken and Vegetable Soup

Ingredients

Vegetable Soup

  • 1 onion, minced

  • 3 tablespoons oil

  • 7 to 8 cups water

  • 1 parsley root, chopped

  • 3 potatoes, cubed

  • 1 small knob celery, whole

  • 3 carrots, grated

  • salt, to taste

  • pepper, to taste

  • 1 chicken quarter

Directions

Prepare the Vegetable Soup

1.

In a four-quart pot, sauté onion, parsley roots and carrots for 30 minutes.

2.

Add rest of ingredients and cook another one and a half hours over medium heat.
