If you are a chocolate lover, these are the cookies to make! They do need a mixer, but they’re worth the extra five minutes.
Yield: approx. 30 cookies
1 (9-ounce) bag Haddar Chocolate Chips
1 stick (1/2 cup) margarine
3 eggs
1 cup sugar
1/4 cup brown sugar
1 tablespoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup Glicks Flour
1/4 cup Gefen Cocoa
Melt chocolate chips and margarine in a pot over low heat or in microwave. Set aside.
Beat eggs, sugars, vanilla, baking powder, and salt on high for five minutes. Don’t skip this step or your cookies will spread and lose their shape. Add chocolate mixture, flour, and cocoa until just combined. Batter should be thick. Cover and chill in fridge for 30 minutes.
Preheat oven to 350 degrees Fahrenheit and line two cookie sheets with Gefen Parchment Paper. Scoop batter onto cookie sheets. Bake in preheated oven for 10 minutes. The edges should look set, but the middle will still appear underdone.
