WOW! Who can believe Pesach is already over!! I always compare making Pesach to making a wedding – there’s all the anticipation, planning, anxiety…. arranging menus, accommodations, and wardrobes etc… and then, in the blink of an eye it’s all over. But hopefully, we are left with great memories (along with the extreme exhaustion), and of course – it’s all worth it!
With the kids heading back to school, I try once again, to send them off with some healthy snacks. Inevitably, we end up with junk food – but good intentions must be worth something!
In the past, I’ve tried multiple recipes for granola or power bars, but have not been able to please my children’s discerning palates. Finally! I put together something new and it actually earned me 3 thumbs up!! I’m the one having the last laugh because these are the healthiest ones I’ve tried so far. I love that they are nice and chewy and so versatile – you can change the white flour for whole wheat, and switch the chocolate chips for craisins or dried blueberries. A great way to add some omega 3 is to switch 1/4 cup of wheat germ for flax seed.
