1 ball of your favorite pizza dough (I buy mine at my local pizza shop)
1 cup sugar
1/2 cup water
2 bags frozen sweet cherries
juice of 1 lime (or about 2 tablespoons Heaven & Earth Lime Juice)
dash of cayenne pepper
2 teaspoons cornmeal
1 cup ricotta cheese
2 tablespoons Manischewitz Honey
2 teaspoons dried thyme
1/2 cup pecans (optional)
Preheat oven to 450 degrees Fahrenheit.
Combine sugar and water in a saucepan and bring to a boil over medium heat. Add cherries and cook until liquid reduces by half. Strain cherry mixture well and return to pan. Add lime juice and cayenne.
Meanwhile, spread dough on a pizza pan sprinkled with cornmeal. Combine ricotta, honey, and thyme. Spread over pizza dough. Top with cherry mixture and optional pecans.
Bake for 10 minutes. Lower oven temperature to 350 degrees Fahrenheit. Continue to bake until crust is browned, approximately 10 more minutes.
Yield: 1 pie, serves 4
