4 eggs
2 cups sugar
1 cup oil
2 and 1/2 cups flour
3/4 cup soy milk
2 teaspoons baking powder
dash of salt
1 teaspoon vanilla extract
different fillings of your choice (We used marshmallow fluff, chocolate frosting, and peanut butter.)
frosting of your choice
Preheat oven to 350 degrees Fahrenheit and place 18 cupcake liners in muffin tins.
Mix all the ingredients (except fillings) together in a large bowl or electric mixer. Pour batter in tins, filling around 2/3 or 3/4 full.
Bake for 30-35 minutes or until a toothpick comes out clean. Let cool for 10 minutes.
Fill three piping bags with your desired fillings.
Push the tip into your cupcake and pipe a nice amount of filling until the top.
Fill a piping bag fitted with a star tip with your choice of frosting and pipe all the cupcakes.
Sprinkle blue crystals on top. Top with Chanukah-themed cupcake toppers.
