1 sugar cube
2 dashes Angostura bitters (see note; optional)
1/3 ounce cognac, such as Deau Cognac Napoleon
2 to 3 ounces chilled champagne, such as Drappier Brut Nature
2 grapes, for garnish
Place sugar cube into a champagne flute. Add bitters and cognac. Top carefully with chilled champagne.
Garnish with two grapes on a skewer or toothpick.
