A refreshing and healthy salad – very enjoyable on a summer day.
chopped walnuts
fresh pineapple
3 large carrots
1/4 cup mayonnaise
1 Tblsp sugar
1 Tblsp orange juice
1/2 red delicious apple
raisins
Peel and grate carrots in a medium bowl.
Add mayonnaise, sugar and orange juice.
Dice the apple and add to the carrot mixture.
Add raisins, chopped walnuts and pineapple to taste.
Cover, chill and serve.
